Ingredients
2 cups mashed potatoes
42 oz Manischewitz® Chicken Broth (3 cans)
2 cup carrots, 1/2" diced
1 cup celery, 1/2" diced
1 cup soy milk, unsweetened
1/4 cup green onions, sliced
1/2 cup English or Petite peas
4 cups turkey, cooked
2 eggs
1/2 cup olive oil
2 cups Manischewitz® Matzo Crackers, crumbled
1 cup Manischewitz® Matzo Meal
1 tablespoon (2 springs) fresh thyme, chopped
Prepaaration:
Prepare mashed potatoes or use leftover mashed potatoes.
Combine Manischewitz® Chicken Broth, carrots, celery and soy milk; bring to a boil; reduce heat and simmer 10 minutes.
Add green onions, peas and turkey; cook an additional 3 minutes.
Using a slotted spoon, remove turkey and vegetables and place in a casserole dish; reserve liquid.
Whisk together eggs and olive oil; set aside.
Mix crackers with matzo meal; stir in egg mixture; blend well.
Place cracker mixture on top of turkey and vegetables; bake in a 350° oven for 10 to 15 minutes or until golden brown.
Combine cornstarch with reserved liquid and heat until thickened.
To serve, divide casserole between six serving plates and ladle sauce over the top. Garnish with thyme.
